Ramiiisol has partnered with Dr. Mitchell Smith (Professor of Microbiology, Immunology, and Cancer Biology) to collect specimens of the microbiology in both the vineyards and the winery to determine and better understand all of the actors that transform sunlight, soils and water into wine. Beginning in 2017, the yeasts of Ramiiisol’s various vineyard blocks were collected, studied, and followed throughout the fermentations. We believe by better understanding of the microbiology of our vineyards and wineries, we will add to and improve upon the qualities of our winegrowing.
