Our Winery

Our Winery

Our winery building is the result of the architectural vision of Robert Hefner and the technical expertise of Jeff Bushman, a renowned local architect. The building was carefully carved from the southwestern slope on Ramiiisol’s western boundary. A simple Italian themed Fibonacci scaled design nestles into the landscape with a backdrop of flower meadows, mature forests to the north, and a vineyard to the east. Our cellar is below ground and a nearby row of vines and its grapes grow above at roof level. Carefully designed overhangs help shade the building and maintain an ideal temperature with minimal fluctuation and cooling, keeping energy use low while providing natural light in our working areas. Our entire winery complex is solar powered.

Our Cave

Our wine cave is completely underground, specially designed to maintain constant humidity and temperature throughout the year without the need for cooling. The winery building shares a wall with the cave and offers a buffer between the cave and the outside world. It is here that our red wines go through 3-5 years or more of “elevage” happily housed in their large Slovenian oak casks.

Our Philosophy

We focus on varietal expression, carefully measured differences in terroir, and believe in old world style farming in the new world. To best express the flavors of our red decomposed granite soils, we carefully vinify our fruit with minimal intervention, always fermenting solely with native yeasts. Where possible the wines and grapes are moved using gravity rather than pumps. The wines are typically whole berry fermented in large conical Slovenian oak vats before completing their aging process in the specially made large format casks in our cave. All of the vats and casks are produced by two world-renowned cooperages, Garbellotto and Gamba. We avoid the use of small oak barrels, opting for large casks with thicker staves that allow for a slower more precise and stable oxygen exchange and elevage. Ramiiisol wines are bottled unfined and unfiltered and allowed at least one additional year of rest in bottle at Ramiiisol’s cellar before being released to the public after a total 2-6 years of carefully monitored aging.

We believe that the intimate detail and hard manual work of our winegrowing, along with our biodiverse ecosystem brings you a wine that is without distraction and a pure expression of Ramiiisol. We believe our wines will reward prolonged cellaring by collectors and enthusiasts around the world and most importantly we hope bring pleasure to all.
